You have a sweet tooth, but want to stay within your calories OR at least get a bit of protein quickly during your day in the form of a treat?
Chocolate and Reese’s Chip Protein Muffins is your answer:
1 cup and 2 tablespoons Almond Milk
1/3 cups vegetable oil/ butter
1 egg or 4 egg whites
1 teaspoon vanilla extract
1/3 cup stevia or sugar
3 teaspoons Baking Powder
1/2 teaspoon salt
2 cups coconut or rice or regular flour
1 cup of chocolate or vanilla protein powder (2 scoops) = 60g protein
3/4 cup semi sweet chocolate chips and or reese’s chip, preferably both!
Pre-heat oven for 400C. Mix flour, salt, sugar, baking powder, protein together in one bowl. Mix egg, milk, vanilla extract, oil/butter together in another bowl. Pour liquid into flour mixture to create muffin consistency. Mix in chocolate and reese’s chips. Do not over mix. Grease muffin dish and fill 2/3 full. Sprinkle chocolate and reese’s chips on top if preferred.
Put in oven for 20 minutes or until golden brown, and toothpick comes out clean!
